Vittoria, Sicily — the pithoi-fermented natural-wine pioneer

In 1980, three twenty-year-old enology students at the University of Catania pooled their families’ Vittoria vineyards into a new estate and named it for the initials of their surnames: Cilia, Occhipinti, Strano. They were among the first producers in modern Italy to revive amphora vinification — fermenting and aging the wine in pithoi, the buried clay vessels that Greek and Roman winemakers used before barrel coopering took over. Forty-five years later, Giambattista Cilia is the only one of the three still at the estate; COS remains the canonical reference for natural Sicilian wine.

COS sits in Vittoria, in the southeastern corner of Sicily, on the rare red clay-and-sand soils that grow Frappato and Nero d’Avola for the Cerasuolo di Vittoria DOCG — Sicily’s only DOCG appellation. The Iblei mountains foothills moderate the heat, and the proximity to the sea adds salinity to the wines. The estate farms across roughly 30 hectares, all biodynamic since 2011.

The Pithos Method

Giambattista Cilia’s niece Arianna Occhipinti founded her own neighboring estate in 2004 with one hectare handed to her by him — that’s the lineage TERROIR profiled in August. COS itself remained focused on the original three’s experimental philosophy. Pithos Bianco (white) and Pithos Rosso (red) are the amphora cuvées; Cerasuolo di Vittoria Classico is the regular DOCG bottling; Frappato is the single-varietal benchmark.

Why COS Matters

COS’s signature is the 200- and 400-liter clay pithoi buried in the cellar, lined with beeswax, where the must ferments on skins for months at a time. Indigenous yeasts. No filtration. No fining. Sulfur added only at bottling. The result is wine that tastes more like the place than like the process — salt-spray Mediterranean fruit, savory iron-mineral grip from red clay, the kind of structure that ages a decade. The Cerasuolo di Vittoria Classico is the entry into the COS philosophy; the Pithos cuvées are the philosophy fully expressed.
